Mrs. L.A. was told to avoid fats after having been in the hospital. Coincidentally, I had been trying to ‘cook healthy’ for a few weeks before she got sick. I think everyone who reads my posts knows that I like nice greasy pork, bacon, roasts, etc. And then there are the freshly-grated hashbrowns with over-easy eggs every Saturday, as apparently stipulated in a prenuptial agreement I’ve never seen. (The rule has been suspended bending Mrs. L.A.'s complete recovery.) So I need some ideas on things that I can make that are ‘healthy’, and not too fussy. Here are some things I make now:
[ul][li]Seared ahi tuna with rice and green beans;[/li][li]Seared ahi tuna tacos;[/li][li]Cajun salmon with mac’n’cheese and broccoli. OK, mac’n’cheese isn’t ‘healthy’, but I believe ‘bad’ things are OK in moderation. (Right now, Mrs. L.A. can’t eat mac’n’cheese, and probably not the Cajun rub anyway.);[/li][li]Greek-style poached cod;[/li][li]Shaved beef salad – only two thin slices of roast beef, and it doesn’t need much of the mayo-based dressing;[/li][li]Caprese salad (Eventually – I don’t think she can take the olive oil or the cheese yet.).[/ul][/li]I got some roasted turkey breast sliced at the deli counter, and I made some tuna salad. The tuna salad has mayo in it, and turkey sandwiches get mayo, but those are healthier than, say, BBQ ribs.
So I’m looking for things I can make that are A) Flavourful, like the things in the list; and B) Not ‘fussy’ – i.e., something that doesn’t have to be ‘crafted’ from items you can only get at the Food Co-Op.
ETA: We’re also eating fresh watermelon, fresh pineapple, avocados, tomatoes, bananas, apples, and sometime mangos.
