Home Fries: Peel the potatos or not?

It sounds a little bit like what is sometimes known as smashed potatoes, but I’m not entirely sure, as they’re pretty distinct from home fries. They are, indeed, excellent.

I’ve know smashed potatoes as various takes on skin on mashed potatoes.
