Hoppin' John and other yummies

I was asked for my Hoppin’ John recipe in another thread, so I’m sharing it here for the general down-home eatin’ public. Post your favorite vegetarian recipes here!

*HOPPIN’ JOHN **
Serves: 4 to 6
* Serve with cornbread and cole slaw, and maybe sliced fresh tomatoes.

                                      1-2 tablespoons olive oil
                                      1 cup chopped onions
                                      2 cloves garlic, minced
                                      2 cups chopped ripe, juicy tomatoes plus 1/4 cup water,
                                      or 1 14- to 16-ounce can diced tomatoes, undrained
                                      1/2 teaspoon dried basil
                                      1/4 teaspoon dried thyme
                                      3 cups cooked brown rice (about 2/3 cup raw)
                                      2 cups cooked black-eyed peas (about 2/3 cup dry),
                                      or 1 1-pound can, drained and rinsed
                                      Salt and freshly ground pepper to taste

Heat the oil in a very large skillet or a stir-fry pan. Saute the onions over medium heat until translucent. Add the garlic and continue to saute until the onions are golden. Stir in the tomatoes, basil, and thyme; cook until the tomatoes have softened a bit, about 5 minutes.

This is the basic recipe, but of course I improvise. I usually make the beans separate from the rice. Enjoy!

Y’know, I had a great deal of trepidation upon opening this thread to see the OP…

Hmmm… that looks like it’d be really good if you added a pound or two of shredded chicken breast… :smiley:

Eggplant
Onions
Garlic
Olive Oil
Tomatoes
Sugar
Lemon Juice

Cut the eggplant in half lengthwise. Scoop out most of the flesh preserving the skins.
Cook flesh, chopped onions and minced garlic in olive oil.
Put mixture back in the skins. Topped with chopped tomatoes. Sprinkle sugar over the top. Sprinkle lemon juice over the top. Drizzle with olive oil from pan.
Microwave or steam.

Sometimes I add mushrooms.

Cooked Hoppin’ John tonight and Mrs. Plant thought it excellent.
