I defer to the web. I was under the mistaken impression that they were the same because one of the local yuppie grocery stores made that claim. Apparently, they are the same species but not of the same cultivar. Which means, I think, that they come from the same original natural plant but have been cultivated in different environments, producing slightly different characteristics.

Well, you must buzz through the ketchup and mustard a lot faster than I do, if it’s not spoiling on you.
When I see labels that say “Refrigerate After Opening,” I usually hear and obey. Saves me a lot of gastric distress in the long run.

I collect hot sauces as a hobby, got something like 20 different ones around right now and I keep them in the fridge. Most of the bad ones I’ve been offered were stored at room temperature and I often wonder about the sanitation where they make some of them. Better safe than sick, I say.
My current fave is still Bufalo Chipotle. They do spell it Bufalo.
As for Dave’s sauces, I don’t go for any sauces made with pepper extract. I know it’s a good buzz for the true enthusiast but I think you could just buy some mace and spray it on your food since it’s the same thing.

Yup, they do…and they spell it “chilpotle” or “chipotle” depending on whether it was bottled in Mexico or the US.
Just had some on a piece of steak for breakfast. Yummy.
