If anybody (especiall Thai) has ever eaten Hot & Spicy Food Thai food, they would tell you that the best thing to eat to cool your mouth down (especially after eating a Thai pepper) is lettuce and/or cucumbers. These really do work!

No they don’t. At least, not for me. But I have heard that old saw before.
I have found that refried beans really put out the fires in your mouth. Of course, this mainly works in Mexican food places since you would be unlikely to obtain refried beans in a seafood place, for instance.
Agreed. Nothing works like dairy. Of course, only wimps need it. 
Raita or tzatziki: cucumber and dairy.
