But I’m having trouble finding historical data on GNP going back to the 1800s. Is there anyplace I can find that? And possibly some information on cyclical business panics?

Start with the Data section on the St. Louis Fed. It’s incomparably complete.
I just Googled “GNP Historical data 1800”. The #2 result was this just-created thread itself! #3 result was a Wikipedia article, which contains a graph of per capita GNP from 1869 to 1918 and a cruder graph from 1700 to 1840.. The Wikipedia article looks like a good read.
(The #1 Google result was a 9-year old unanswered query on another forum. #4 and #5 results were useless and reported “These terms only appear in links pointing to this page: 1800.”)
