How can I make Cracker Barrel Pancakes at Home?

I LOVE Cracker Barrel Pancakes and I want to know how to make them at home. I particularly like the crispy extrerior and sweet interior.

How do I make a crispy pancake? I HATE Bisquick so please tell me there is another option.

I’m a cooking idiot so tell me what pan, temp time etc… to cook them. How often should I flip to ensure maximum crunchiness?

Does Cracker Barrel sell batter mix in their store? I know they sell their syrup and some other things, I’d be surprised if they didn’t sell pankcake batter.

Make the batter thin using buttermilk instead of milk. Brush a little bacon grease and butter on a 400 degree griddle, and pour batter immediately.

This is gonna sound like a dumb question but I’m a single guy that never cooks so here goes.

Where do you purchase buttermilk? Is it in a can? Is it in a bottle by the regular milk?

Should I use the same amount of Buttermilk as regular milk per the recipe?

Should I use Bisquick or is there another way to make pancake batter?

Can’t help you with the recipe itself, but as to buttermilk:

Yes, it should be right there with the other milk.
It comes in the carton or bottle, same as regular/2%/1%/Skim milk.
99 times out of 100, you use the same amount of buttermilk as you would use regular milk.

If he’s avoiding Cracker Barrel for political reasons, why would he then by their mix?

First, forget you’ve ever heard of Bisquik.

Pancakes are really very easy.

1 cup of flour (135 g)
1 tablespoon of sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Sift together into a large mixing bowl.

1 cup of buttermilk
1 egg
2 tablespoons of vegatable oil.

Mix with a fork until egg is slightly beaten, no need to whip it crazily into a froth.

Add to dry ingredients and whisk to wet the ingredients. Don’t beat too much or the pancakes will be tough. A few small clumps are okay.

Add a dash, maybe 1/2 teaspoon, of vanilla and mix in.

Set aside and start heating the skillet with your burner turned half-way between simmer and high. Use shortening on the skillet. Skillet is ready when drops of water dance on the surface. Depending on your stovetop, you may need to lower the temp a little bit.

I use a ladel to spoon out the batter in nearly uniform amounts.

Cook on one side until the edges start to look dry and the bubbles on the top of the batter start popping and don’t immediately fill in. Flip and finish cooking. It doesn’t take long after the flip.

An alternative to buying buttermilk from the dairy area is to buy SACO real cultured Buttermilk Blend and follow the recipe on the canister. They’re almost as good as using liquid buttermilk and it keeps for much longer than a carton.
