How do I make candied yams?

I start with a can of yams, pour the yams and their juice into a pot, add equal amounts of butter and either white or brown sugar…and I end up with yam soup? How do I keep the yams intact and create a glaze?

Start with raw yaps or sweet potatoes, bake them or peel and slice and boil til well done, then add the butter and brown sugar and bake.

You ARE going to put marshmallows on top, right?

** Rilchie, ** I’ll just tell you the way I do it, ok? I’m not sure if Chef Troy would agree, but I put a bit of cornstarch in a bowl and mix a teeeny bit of the canned yam liquid into it, stirring vigorously. NOT the whole of the liquid, just a bit of it.

In a pan on top of the stove, I already have the brown sugar, a teaspoon of vanilla and a tblsp of butter/marg, this is what I pour the cornstarch/yam liquid into and heat. After it’s heated thoroughly, keep on stirring, it’ll begin to thicken, pour over the potatoes, adding marshmallows if you want after the potatoes themselves have heated throughout.

It’s true that cooking sweet potatoes tastes a great deal better than the above, but it does take a lot of effort and time, which is what I think we are trying to save here. Good luck!!

But what amount of brown sugar?

Dump a can of yams into a baking dish, put about one sticks worth of butter on top (cut into chunks), cover with brown sugar and cover with marshmallows. Put in the oven on 325 for about 30 minutes or marshmallows are brown and crusty. If you use canned yams it doesn’t take long at all.

Don’tcha just hate people who rarely have to measure anything?? Well, that’s me, I THINK I use about a half a cup, pressed down of brown sugar. You might want to start with that, I don’t think it would be MORE, it’s probably a tad less.

My 2¢ on candied yams:

I made this recipe last Thanksgiving, and the family went wild over them.

4 Sweet Potatoes, peeled, and cut like “homestyle fries”
Steam these for about 15 to 20 minutes, to soften them slightly.

Toss these into a 9 x 9 baking pan with this sauce:

1 stick of melted butter
1/2 cup of brown sugar
a shot of Southern Comfort
1/4 tsp. of ground nutmeg
pinch of ground cloves

Put these into a 350° oven, and bake these until the sweet potatoes are fork tender (30-45 minutes). If you want to add marshmallows, add them now, and put back into the oven until the marshmallows just start to brown.
