How do you dispose of the used oil when you deep-fry something?

You only cleaned them out once a week? Where’s that barf smiley…

Once a week is common in the restaurant industry. As long as you filter and skim it the oil doesn’t go bad in a week.

Once a week is plenty. We’re dealing with oil here and frying the same thing in it over and over doesnt really make it very dirty. Since we’d toss still frozen fries and nuggets into the fryer right out of the package, the contamination was minimal. Plus, we would always cover up the oil with a lid at the end of every day. The most pollution we’d get were from the bits of fried items that would break off and sink to the bottom, but those are scooped out regularly

BTW, a measurement of the increased worth of used fry oil for biodiesel manufacture and the like - several months back there was a spate of reports about thieves stealing the used fry oil from restaurants. The service companies that picked the stuff up were starting to find the containers empty. Essentially, this is how you know that a waste recycling effort is really worthwile - somebody starts stealing the refuse. And the company that has been enjoying an arrangement where somebody is paying them to pick up the raw materials they use gets very peeved. Actually, I wouldn’t be surprised if used fry oil is eventually BOUGHT from restaurants, rather than hauled away for a price. If it isn’t working that way already.

Personally, I’ve taken to pouring used oil from frying right into my kitchen trash. Let the oil cool first, of course. But usually there’s so much absorbent stuff in a reasonably full bag of trash that the oil just gets soaked up by whatever. It hasn’t yet been a problem.

Yeah, that’s what I do too, actually. Coffee grounds, paper packaging and used paper towels are pretty absorbent. Plus, it’s in a plastic bag lining the kitchen can anyway, which is going to go in a trash bag filled with trash from the other wastebaskets to go out on the curb inside a wheeled bin. Then the trash guys don’t actually handle the bag - an arm on the trash truck picks up the bin and dumps it into the truck.

Gracie) Of course not, I give my waste kitchen fat to the butcher. Everyone should do this, besides getting 2¢ for every pound of waste kitchen fat turned in, our government needs waste kitchen fat to make bombs and bullets. Our boys are doing a great job over there and it’s up to us to do our job here.
