I am a fan of the French Press myself but my wife is keen on the Chemex.
The French Press creates a coffee with some depth and, well, texture. The Chemex tends to be more … clear. Yes I understand that the difference is that the French Press method both extracts more of the oil soluble portion and leaves some fine sediment suspended in the cup, which is what to me creates the mouth feel that I enjoy, whereas the Chemex (and other fine filter methods) is a short enough contact time that it is higher percent of water soluble elements and the sediment, and even some of the oils, are filtered out, leaving a clearer appearing and clearer tasting coffee without the same mouth feel.
I know that one is not better or worse, that is personal taste issue. But does it track with other preferences? I’m guessing that Chemex people like flan and creme brule whereas French Press people would prefer apple pie. That French Press people would prefer drinking a good Zin over a dry white and Chemex maybe the other way around.
Am I off base?
