Hmmm…that’s more of a quesadilla. Delicious to be sure, 'specailly with some tomatos and carmelized onions, but I’m not certain if it qualifies as a sandwich any more than a calzone would.
However, I have to admit I would have staved my freshman year in college without quesadillas (cooked in between parchment paper with a clothes iron). Dorm food is worse rotgut than Gilbey’s Gin…
I usually use either American or Cheddar, sometimes with a crumbling of some special cheese (Harlech Horseradish is especially good) on potato bread. Put it on the oven rack for a bit so as to melt all the cheese, then grill it with olive oil or butter till thoroughly melted.
Top with dill pickles (the presliced kind) and/or veggie bacon slices. Sometimes I add a dash of McCormick’s Cajun Seasoning, or if I’m feeling really ambitious, I whip up my Cajun sauce (my attempt to duplicate the Creole remoulade served by a restaurant where I once worked). Yummy
Mrs. Baird’s Large white bread, 1 slice of Kraft American. Butter on the outside of both slices of bread, grill in medium hot skillet until light golden brown. Serve with Campbell’s tomato soup, made with milk. Throw lots of crumbled saltines into soup, after dunking the first bite of sandwich.
I like it plain, too. This is the only situation in which I will willingly consume “individually-wrapped” cheese. I like it with tomato soup, or even better, Spaghetti-Os. mmmmmmmmmmmmmmmmmmmmmmmmm
Serve mine with sides of Miracle Whip (yes, I said it!) and grape jam (not jelly).
Use a spoon to apply a dollop of either, or both, prior to taking each bite.
Mmmmmmm, quesadillas… Well, they’re closer to a grilled cheese sandwich than to “Mexican pizza” which is how a local chain tried to market 'em. :dubious: I don’t like regular grilled cheese sandwiches because the bread gets all greasy. Tortillas don’t suck up the grease like bread does…
Lay slices of bread on counter, take a drinking glass and sqwoosh a circle in the center of them. This makes space for more cheese. Put a large dollop of real butter in pan, melt it. Cook inside, sqwooshed, bread until golden brown and then flip. Add lots of cheese. wait for a few, then flip pieces together, make sure it is brown on both sides.
