I know mint is supposed to go good on lamb, but I never cared for it. I tried the jelly and a mint sauce my parents use. It just seems to cover the flavor of the lamb, and I love the flavor of the lamb.

teela brown, what you had is in fact the real “mint sauce”, and is the perfect accompaniment to lamb (as opposed to the abomination that is “mint jelly”). In fact, all it needs is fresh mint and vinegar. The garlic and olive oil should be there because – well – garlic and olive oil should always be there.
Warning: some “specialty” grocery stores in the US sell something called “mint sauce” that has five or six mint dregs at the bottom of a 5-ounce jar of vinegar, priced at $3 or so. Do not buy this. Make your own with fresh mint, or at the very least buy some concentrate such as Burgess Mint Sauce.
In answer to the OP: my lamb chops should be grilled, seared on the outside and pink in the middle. There will be olive oil, fresh rosemary, fresh ground black pepper, fresh mint, and fresh garlic available. Every cut of lamb is different, and it will let you know what it wants when you talk to it before putting it on the grill. A good sharp mint sauce and some Dijon mustard (my favorite at the moment is Trader Joe’s Dijon) will be needed once it gets off the grill.
Veggies: new red potatoes are good, plus whatever green vegetable is fresh (asparagus goes well, but of course has side effects. :eek:
Really good lamb is the meat that would be hardest for me to forswear.
Believe it or not, lamb goes really well with A-1 Steak Sauce!
But it goes better still with mint jelly, IMO.
But . . . come on, guys, don’t any of you have any opinions about mutton?
