I know you asked about wallpaper, but in terms of bumpy walls, Have you thought about using beadboard or board-and-batten instead? Painted a glossy white it looks snazzy and hides a multitude of sins.
As some one who used to hand paper for a living; you are making a wise choice.
Have you considered wood paneling? It will look like a ski lodge in there.

I had a half bath that had been desecrated with plastic “tile” glued to the walls. After prying it all off, the lower half of the walls was wrecked, and the upper half was salvageable with some spot patching. Beadboard on the bottom half with a cap molding looked wonderful in gloss white. The slick paint was also easy to clean.
As for wallpaper, yes, any fool can hang it, but making it look good, with the pattern matched up and flat seams that aren’t peeling, and not coming out looking like a Three Stooges skit with globs of paste in your hair takes skill.
