How healthy IS Vietnamese food.

Note: This is inspired by my own thread in Cafe Society, but I’m looking for factual answers.

I’ve only seen a few fat Vietnamese. The food seems pretty healthy with all of its fresh foliage. The bánh xèo is fried, though. The things I eat have grilled pork, but in proportion to the rest of the dishes the portions do not seen excessive. I’m not sure what-all is in the fish sauce.

So how healthy is Vietnamese food anyway, especially in comparison to other cuisines?

(Again, I’m only looking for factual answers – or as factual as possible – in this thread. The other thread is still open for Cafe Society stuff.)
