How is the language of exit polls framed?

We keep hearing how X percent of people voted a certain way because of “moral values,” for example. How are these questions asked? Do exit pollsters provide a list of possible responses? If not, what do they put down if a voter gives a complex response? I presume that when all this data becomes refined (an ETA I heard today is April) the discussion can proceed in earnest. But before that, I’d like to know more about how the data are collected. Does anyone have first hand evidence? xo C.
