If your looking for just plain fun and don’t mind cheapening the play, go for “Follow the Queen” or “Baseball.” “Black Chicago” is also fun. All the rules should be on that page.

Here’s a narrower answer in the case of Casino poker. Hold’em is most popular, followed by 7-card Stud and Omaha/8 (High-Low). A few Casinos will spread 5-card stud, Omaha High, 5-card draw, and Crazy Pineapple. I’m sure KidCharlemagne’s link describes these. Casinos also have 3-card poker and other card games, but since those are player-against-the-house, like BlackJack, they’re in a different category.
