Leaving aside short series like BlackAdder and Police Squad!, I’ve seen every episode of:
Star Trek (the original series)
Wiseguy (including the last two episodes that were only shown in syndication)
Monty Python’s Flying Circus (in fact, I went though the complete DVD set and watched them in order)
Survivor (series 2-6, didn’t see the first year)
And there are probably several other shows I’ve seen every episode of in their syndication runs; MASH, The Odd Couple, Mary Tyler Moore, Barney Miller, etc.
Every surviving William Hartnell/Patrick Troughton/Jon Pertwee era Doctor Who serials except two, all of Peter Davison’s stories except one, the first half of Colin Baker’s tenure, and all of Tom Baker’s except four.

I’ve probably seen every episode of Star Trek and a bunch of other series, but I’m not sure. I’m currently working on Xena and Twin Peaks.
Roseanne and Grace Under Fire are the only ones I’m sure of. Not that I particularly like them or anything, but they were in constant rerun rotation at 5am and I work nights. (It’s weird that Grace had 4 kids, but they were played by 7 different actors.)
I thought I’d seen all the SNLs, but every once in a while I see one late at night that I’d forgotten or was unaware of. When I was a nightclub comic in the late 80s/early 90s, I just wasn’t around a TV set much on Saturday nights. I still have yet to see the eps with Jodie Foster, Ray Sharkey and Blythe Danner, for example, and I don’t think I’ve seen the horrifying ep with Stephen Segall from start to finish.
Star Trek TOS, despite being in constant reruns somewhere at all times, still has a couple of eps I haven’t seen yet (like the Harry Mudd stories or the one where Spock gets it on with Mariette Hartley). It’s my own damn fault, I guess. Until a couple of years ago (I’m 42), I thought that Nurse Chapel and Yeoman Janice Rand were the same person. It’s also only recently that I saw “The Corbodite Maneuver” and “Return of the Galileo 7” (I’m sure I got both those titles wrong; obviously, it’s not a priority with me) which answered the question that always nagged me as a kid: “Why does Spock work for Kirk and not the other wqay around?”
None really. However, I tried to watch all the episodes of I’ll Fly Away.
