I was given a 2 1/2 pound pheasant (free range). I would like to have it for dinner tonight-how whould I cook it? Is roasting the best way?
I think I’m going to make one today, too. My favorite way to make it is to throw it in a small casserole dish with some wild rice, brown rice, water chestnuts, and chicken broth. Turns out great. I use about half a cup each of the wild rice and brown rice, 2-1/2 cups of chicken broth, and a small can of water chestnuts. It takes about an hour and a half to bake.
ETA: You probably already knew this, but the casserole dish should be covered.
Addendum to Yellowval - the oven should be at 350 for 1.5 hours…check the breast after 1 hour. When the thickest part runs clear it’s done. You can also use stuffing as well.
Oh and I always put a peeled apple in the cavity.
You shouldn’t. Just because someone is poor is no reason to eat them.
