I love ginger ale and beer but sometimes when I go to take a gulp from the bottle it just explodes in my mouth. I can’t control it and I spew all over. I have determined that it is the concentrated carbon dioxide in the top of the bottle that causes this. All I have to do is decant the ginger beer into a glass. Even then it is best to gently blow across it before sipping. Works like a charm. I’m drinking some Cock 'n Bull right now.
I tend to drink Bundaberg when I have Ginger Beer. No sneezing issue for me. But I agree, it is the initial fizz that causes a bit of a twitch or itch that leads to the sneeze for some people.
Pink cap Blenheim for me. It does go up your nose a bit! That’s all part of the fun, but covering your ginger beer with about 2" of Myers rum will fix the sneezing and adds to the experience in other ways.
You could try some antihistamines an hour or two before imbibing and see if that helps. I only ever had the sneezing problem with the hot Blenheim’s version, and that was more due to the added capsaicin, which ginger beers usually do not contain.
I’m partial to bourbon myself, with a squeezed lime half. It’s called a ‘whiskey buck’ (not a “mule”).
