For a bit of “real” Hong Kong, take the red metro line (which IIRC runs from Central to Tswan Wan in northern Kowloon) up to Sham Shui Po and have a wander around.
Kowloon Park is a nice place to escape the chaos of the city.
See Aberdeen and Stanley Market.
Take the ferry to both Lantau (Po Lin Monestary and giant Buddah) as well as to Macau.
I second Lantau. Take the walk to the beach area through the markets and restaurants. I heard there were caves there, but I didn’t have the chance to search them out. Eat a nice meal of seafood while you are there.
Check out the Ladies’ Market. There is much more than just stuff for women. You’ll be sick of hearing “copy watch”, “copy handbag”, “copy whatever” by the time you’ve walked through, but you’ll make out like a bandit. The HK museum of art is also worth checking out while you are there. I don’t recall having to pay admission.
Do try to make it to Macau. I really wanted to check it out while I was in HK, but it was a holiday and the ferry was on the day I planned to go. Have one of their famous egg custard pastries.
