I have chicken breasts, and marinade for them. Now what?

I have boneless skinless breasts, and a bottle of spicy mango marinade. What I lack, however, is inspiration. What do I DO with them?

What would YOU do with them?

I need ideas for turning that into a complete meal of some kind. I mean, obviously I intend to marinade the chicken, either whole or pre cut. Then what … ?

Let’s see…around here we would:

grill the breasts and serve over rice or noodles

       "            slice and serve in a chef's salad

       "            slap on a bun with chutney

        "           shred and make chicken tacos (although dark meat is much more flavorful)

What would I do with them?
I’d cut the chicken breast into thin strips. Through them in a tupperware with the marinade for a half a day. Thread them onto some wood skewers and grill them outside.
I’d probably put some fresh green beans marinaded in olive oil and garlic in a grill basket to go along with them. And maybe make some stove top instant cous cous also.

Spicy mango? I’d go pseudo-Caribbean. Add some sliced jalapeno to the marinade for a few hours than grill it over charcoal or hardwood and serve with peas & rice and fried plantains.

Sounds like it would go well with some couscous.

Agreed about the skewering it. I might cube it and make a keboby (kebobesque?) dish with alternating chicken, jalepeno, onion, and cherry tomatoes. Most people would probably choose bell pepper, but I’m not a huge fan.

I tend to be lazy when I cook for myself.
350 degrees for 30 minutes.
Maybe make some asparagus or broccoli as a side, if I’m feeling energetic.
