My vote is for a stir fry, or a rice dish with Indian spices – doesn’t matter which blend, just that it tastes good to you. If you don’t like those collection of spices, maybe a lasagne or try to use the pork mixed with other things for a real sauce bolognese. (Reduce in milk, reduce in wine, etc.) Can’t go wrong. Or just make some real fine sandwiches.
Some discussion with Mr. Horseshoe ensued. Conclusion: stir-fry. I’ll make the sauce ahead of time - mmm, spicy stir-fry sauce - and go pick some snow peas before it gets dark. Thanks for the great ideas, everyone! We have pork chops pretty regularly but we both have smallish appetites, so leftovers are inevitable.
