…defrosting on the kitchen counter. What shall I make with them? I’m thinking seafood risotto, which I love but Mr Rosity isn’t keen on (nor is he keen on pasta, the big freak), so I’m open to other suggestions.
It’s freezing here though, so I’m thinking along warming, comforting lines, rather than, say, a zingy seafood salad.

Ok seriously, make a seafood chowder. Blend the fish for the soup but leave the scallops whole, and garnish with the prawns once done. Soup is warming, and chowder is divine.

Mmm, chowder’s looking like a definite possibiity (I love fish pie, but we’ve had it recently, also, again, Mr Rosity isn’t that keen. I know, it’s a pain. He’s not keen on most things that aren’t chilli or curries. But I digress).

If not chowder, you could do a seafood platter, cooking everything separate and presenting it on a single platter.

Well, you could always make seafood chili or seafood curry.

Sounds like the makings of a lovely paella. It’s with saffron traditionally, but you could certainly spice it up if that’s what he likes (I make mine somewhat spicy).

I would make a pizza. Seriously, seafood pizzas are amazing!
Why ruin such nice seafood by putting it in a chowder or curry or anything else? Salt and pepper it, put some olive oil on it, and grill it. Serve it with lemon wedges and drawn butter on the side. Done and done.
Cioppino or seafood paella would be my choices. By the way, paella can be made with any short-grained rice such as Arborio. It doesn’t have to be Spanish.
Marinate the salmon in soy sauce, honey and sriracha then grill it in a pan with some butter. Use the rest for a chowder. Damn, that sounds pretty good.

In the end we had…fish curry.
Yes, I know. But when I looked at what I’d defrosted it was far too much for two people for one meal, so I made the salmon and cod into a Thai-style curry, which pleased Mr Rosity, and kept the scallops and prawns for tonight. I shall make them into something nice for me, and himself can start eating some of the chilli surplus I made last week.
Btw, if this had been really good seafood I’d have agreed with serving it more or less “naked”. But we’re not talking freshly caught, still with a wiff of ozone on it, gourmet fishmongers seafood here. We’re talking frozen, was on special offer at the supermarket seafood.
