I just got a sausage maker… what should I know about making sausages?
Everything from materials, hygene, recipes, etc is what I am looking for. I have a well equipped kitchen, and know how to cook, I just have never made sausages before.

I cannot recommend this book enough,
if you can’t get that book, the main points they drive home for sausage making is to keep your ingredients ice cold, your tools immaculately clean and use the freshest and best meat available.
I was about to come in and chime in with that suggestion.
Listen to lokij. Charcuterie simply is the sausage maker’s bible. It’s the first and possibly last book you’ll ever need on the subject.
I want to learn to make sausages someday so I can do them in the shape of balloon animals.
