I need bacon (and vegetable) recipes!

King Bobo’s hotpot recipe gives me permission to do something in the crock pot with bacon - I’d wondered if doing bacon that way without pre-crisping it would come out OK.

I have never tried this in the crock pot because a lot of the appeal of the dish is the way the top, bottom and edges of the dish get brown and/or crunchy and delicious in the hot oven.
I think if I were going to try it in a crock pot, I would use more white sauce* as in the oven method most of the sauce is absorbed by the potatoes. I imagine in a slower cooking method even more sauce may be absorbed. Also I would use the leanest bacon I could find; the higher oven temp cooks somewhat fattier bacon better.
*as a WAG, perhaps x1.25 -1.5 the amount in the receipe

Slice up some bacon (or pancetta) across grain in about 1/4" strips. Saute until just crispy-like. Remove from pan. Halve an onion and slice thinly. Add to the hot fat and saute until tender and sweet. Add a few chopped tomatoes to the onions (or a couple of cans of diced tomatoes), return the bacon to the pan. Cover and simmer for about an hour. Serve over pasta and top with fresh basil and Parmesan cheese. Heaven, I tells ya.

Mustard the condiment. I usually use an inexpensive dijon. You can also add mushroom or onions to this.

It was lovely! It is December 1st, and I’m down to my last 5 tomatoes from my garden (that I brought in before the frost), and I wanted to use them for something worthwhile. This was it!

As a T1 diabetic, this really hit the spot, without being carby (I splurged, and used about 5 croutons for my serving), or sweet. It was filling, and quite tasty! So, I felt that I had to let you know that it is very well worth trying!

I would post my sausage & bacon gravy recipe, but you all aren’t ready for that much goodness. Plus, it would put you off restaurant gravy forever.

I’d love to give it a whirl, and I know my husband would love for me to give it a try, also. It sounds delicious! We’re not the type to go out to restaurants, anyway. You can make better food at home, from scratch, for much less money.

I think you may be confusing “hot pot” with “crock pot”… although I’ll admit this recipe for “hot pot” is nothing like the “hot pot” I’m used to (Asian). There is no way a crock pot will get up to the 400F stated in the recipe.
