I need help making my cookies low fat!

My grandfather had a stroke last week. :frowning: I am going to make him his favorite thing in the whole world to cheer him up: oatmeal cookies! :slight_smile:

But because of his new diet, they need to be low fat. I found a low fat recipie on allrecipies.com, but it got mixed reviews, and I want these to be the best darn low fat oatmeal cookies ever! Does anyone have a recipie?

Even suggestions on what to substitute instead of eggs or butter would be good. And can stroke patients have salt? Does it matter?

As for low-fat substitutions in your favorite recipes, using applesauce is pretty common, as is low-fat butters and sugar substitutes. I’ve had good results with the applesauce/skim butter/skim milk, but I don’t reccomend the fake sugars. They really don’t make a good cookie and your effort will be wasted.
You can use egg whites instead of whole eggs, or even egg substitute, but be careful with substituting low fat stuff for everything in a recipe at once. Lots of “healthy” stuff has extra water or additives that can evaporate during baking leaving you with crispy little crackers instead of cookies. Try using half “real” and half “healthy” for some ingredients, or using skim milk and egg whites but full flavor shortening, etc. It might take a little experimentation to find a good balance.
Also, molassas can be a good sweetener, depending on the cookie (gingersnaps–my Favorite!–are actually pretty harmless, does your gramps like them?) I’m not sure about salt for stroke victims thing though–maybe ask your gram (if she’s still around, that is). Hope your gramps is feeling better soon!
Low Fat Oatmeal Cookies

1 c Flour
1 ts Baking powder
1/2 ts Baking soda
1/2 ts Salt
2 tb Shortening
1/4 c Applesauce
1/2 c Sugar
1/2 c Brown sugar
1 Egg
1 ts Vanilla
1 1/3 c Oats
1/2 c Raisins

Preheat oven to 375. Mix flour, baking powder, baking soda and salt.
In a separate bowl, whisk together shortening, applesauce, sugars, egg and vanilla until shortening breaks into pea sized pieces. Add flour mixture to applesauce mixture.
Mix and then fold in oats and raisins.
Drop onto lightly greased cookie sheet 2" apart. Bake for 10 to 12 minutes.
60 calories and 1 gram of fat.
