I want tasty stuffing for squash!

(need answer fast!)

Well, sorta. We got some 1-ball and 8-ball squash and zucchini at the farmer’s market, and I’d like to make some kind of spiced filling to stuff them with and bake for dinner tonight. I have some ground beef in the fridge (vegetarian options are fine, though) and I want the filling to be really seasoned, lotsa garlic and herbs and such. I have quinoa, too - anyone ever used that to stuff veggies?

It’s zucchini season - I’m sure some Dopers are inundanted with the stuff and could either offer a recipe or could use some insipiration themselves! Whaddya got?

Stuffed zucchini with ham and mushrooms

This is a great recipe that I usually use beef for instead of lamb (one of our family members detests lamb). I’ve never used quinoa in place of the brown rice, but it should absolutely work if you cook it first. If you can’t find za’atar, you can make your own. If you can’t find ground sumac, lemon pepper isn’t really anything like it, but has enough of a similar flavor profile (tangy/spicy) to make a decent substitution.

What is a 1 ball zucchini?

I used bread crumbs, an egg, seasonings of your choice, real bacon bits, minced onion.

Parboil the squash and scoop out the seeds. Stuff and top with cheese. Bake for 20-30 min.

My eight ball zooks look different - a much lighter green, ang quite beautifully varigated. According to that writeup, I’m harvesting them much too late. I pick them at about 6" diameter. I’ll pick some smaller ones today and cook them side by side and compare tastes. I can’t wait to try that ham and mushroom recipe!
