I once read a Niven story in which an immortal guy’s plane got eaten by a giant bird, and he played solitaire until it died and its body rotted away from around the plane. Does anyone know which story this was, and what collection it was in?

Missed the other part of your question…it was in ‘Tales of Known Space’ and the hard-to-find older collection ‘The Shape of Space’.
