I believe you might approximate an Evil Hogwarts by enrolling in Durmstrang. It’s probably in Eastern Europe.
I think if I were going to be a wizard, I’d take ALL the classes. I don’t want to find myself one day saying, “Damn! If only I’d taken Ancient Runes!” in an important moment. However, I think I’d have the most fun learning:

I think Ancient Runes is the lit class. They have a chorus so there’s probably a music class somewhere.

When Hermione took her O.W.L test for Ancient Runes, didn’t she make a mistake on a translation word? This suggests you must a foreign language…though perhaps a very ancient language.
People, people, Hogwarts is clearly a whole-learning institution. Every class requires them to write scrolls and scrolls of papers, so there’s your English, writing, and grammar. Most of their incantations are some bizzare pseudo-Latin, so I suppose that’s foreign languages. Magical history, besides being it’s own class, is included in nearly every class: history of potions, history of divination, etc. etc. Maths are obviously required in Potions. Muggle history - meh. Who needs it? The Muggle and Magical worlds shouldn’t overlap, unless you’re doing something wrong. When something does go wrong and the Muggles become aware of the Magical world, specialists like Mr. Weasley go in and clean things up.
And I thought Charlie was studying dragons, like, studying dragons. What they do, who they eat, where they obtain their damsels. Like the Jane Goodall of the magical world. It didn’t seem like he was still in school.
I’d petition for a time-turner. Or become a grad student. No way I could choose. But Herbology and Care of Magical Creatures would be high on my list.
