Quick tuna “casserole”:
Nuke a package of Stouffer’s mac & cheese about halfway (6-ish minutes) until you can stir it.
Stir in a SMALL can or one of those envelopes of tuna.
Stir in some frozen veggies-- frozen mixed veggies if you have them, or just peas, or corn, or some combo.
Nuke the rest of the way (another 6-ish minutes).
I also thought I was done with tuna once, but it turned out it was just the Kirkland brand (costco.) I swear there is a tiny whiff of cadaverine in every can.
As for tuna casserole, here is mine, easy comfort food:
1 box cheap mac-n-cheese
Cream/butter as package directs
1 can tuna (drained and flaked)
1/4 tsp dried basil
1 can diced tomato (drained)
1 small onion
Preheat oven to 450F
Boil the noodles in an oven-safe pan.
In a frying pan, lightly sauté the onions in a touch of butter. When they are just translucent, add the tomatoes and basil. Salt and pepper to taste.
Combine all remaining ingredients (including sauce packet, and cream/butter as package directs) and stir.
Move to oven and leave at 450F until the top browns.
I’m kind of indifferent to tuna (I used to hate as a kid), but I really like this Rio Mare corn & tuna salad. It’s great for a snack on a hike.
