Yukon Gold Potato pizza from Serious Pie in Seattle. Pecorino Romano is the cheese, seasoned with Rosemary… Many other amazing and alternative pizzas. My second choice is clam and pancetta, but that is two toppings.

One of my friends from Naples makes this type of pizza every so often (though I think it is more associated with Rome). I was a bit skeptical about the starch + starch combo, but it is excellent.

There’s a local pizzeria with two storefronts. I’m gonna call it a chain. My preferred topping: feta cheese.

Y’know, I don’t see anything particularly wrong with the Hawaiian pizza (pineapple plus either ham or Canadian bacon, depending on whom you ask), but if you’re going to cut that down to one topping, why would you remove the meat and leave the pineapple? It seems to me that the reason for the pineapple is because that’s what goes well with cured salted pig.

I agree. I’m totally on board with pineapple + salty cured pig. It’s a great combo, don’t let anyone tell you otherwise. But pineapple on its own just tips the scale too far to the sweet side for my tastes.

In any case, pepperoni, definitely pepperoni. Preferably the “grease cup” style.

Oh god, if we could have any pizza, it would be a little defunct chain I used to go to with tiny, spicy pepperoni they put on top of the cheese so they’d get crisp and hold little puddles of grease.

Indeed, put a slice of pepperoni and a slice of pepper jack on a cracker and eat it cold, and it’s at least 75% of the way to a good pizza.
