I need to feed lunch to 3 adults and two kids tomorrow and I’m stumped for ideas.
The kids are 18 months and almost 4 years old. I’d like to keep it somewhat healthy, but the male adult is a very healthy fire fighter, so it needs to be filling too.
Can you please give me some suggestions. I am just tired of thinking about it.
Thanks in advance.
Oh, I don’t have leftovers from Thanksgiving, so that’s not a good option.
Could you tell us a little about what you and your guests like?
What cuisines do you and they enjoy? Are there any foods anyone involved would like to avoid? Would like spicy stuff be good? Do you and umpire guests like to try new things, or would you rather stick to familiar things?
Chicken tacos. Keep the ingredients as healthy as you like, and the firefighter can have as many as he needs to fill himself up. Make quesadillas for the kids. Buy a pre-cooked chicken and all you need to do is slice it.
I’m with the Mace kid. Grab a cooked chicken. Some tacos, lettuce, tomatoes, onions, cheese, and the list goes on. Add some canned beans, you could puree them for the 18 month old.
I like just about everything, the fire fighter is a human trash can and will eat anything :), my daughter is not too finicky, but will not go with me to the Indian Food Buffet so she can be finicky about some things. The kids, who knows, sometimes they will scarf down the same thing they turned their nose up to the day before.
I love the sound of both of the other ideas in the thread so far. Tacos or Jacket Potaoes, both sound terrific and not too much work.
I think the tacos are a great idea. Jumping slightly from there you could make enchiladas.
I’m also a big fan of lasagna. Really not all that much work and easy to make ahead and just toss in the oven as you chat with your company. A quick salad and garlic bread and you are set.
Lasagna and spaghetti and meatballs are my sure-fire go-tos. I like frozen Stouffers lasagna myself with extra sauce. Prepared meatballs are everywhere, both meals couldn’t be easier to fix. (Really good hot dogs, with or without chili, a veggie platter with dip, and fries have been eagerly consumed, no nonsense about healthy eatin’, it was all “more, please!”)
