When I was a bright-eyed young Aggie at UC Davis, we were told in a livestock production course that Taco Bell was UCD’s leading buyer of cheek meat. It’s beef in there, they just use the small bits.

Taco Bell doesn’t seem to use as much soybeans

I would guess that the use of “protein” is an industry wide thing because many of them use non-meat filler suck as soybeans, oat gluten, etc.

I saw the same show the OP is referencing, it wasn’t just the Taco Bell guys, the Carl’s Jr/Hardee’s suits used the “protein” term as well. One guy said that his idea of an outrageous but delicious sandwich would be one with all the “proteins”; chicken breast, beef patty, fish, and bacon…

Then he made one and took a bite.

My favorite part was when the Taco Bell lady was so eloquently describing how a taco is made.
