I mean I know it exists but every quote I’ve seen is a “family” quote. If you have only one child, it doesn’t make sense financially to spend an extra $300-$500/mo just on their insurance. Are their any companies out there (and yes I know YMMV depending on state) that price out family plans based on the number of children you have?
I used to work in the benefits outsourcing industry. Many companies offer Employee+1 and Employee+2 plans in additional to unlimited Family plans. Those options are mainly for single parents with one or two children and they are cheaper than Family plans.
My company plan from Medical Mutual covers my business partner as “Employee + Spouse + Child”

Also, you state may have an insurance program just for children.
