One of my employers supplied Cup-O-Noodles in the coffee room. I used to make the soup, then pour most of the liquid into a cup to drink as broth. I’d get those little packets of cheese and crackers (there was a little stick to spread the cheese-stuff) and put the cheese into the noodles and mix it up. That was tasty.
It’s been a long time since I’ve had Nissin noodles. Nowadays I like Shin Ramyun.
I’ve thought about starting a thread on that. Is there some reason they can’t make a low(-er) sodium version?
This is one of the reasons I don’t eat ramen more often. I don’t have a problem with sodium, but I notice how much is in them. The larger issue for me though, is the fat content.
Yeah, me too. Most people don’t realize that the noodles are deep-fried.
My kids love them. I don’t mind them eating them from time to time, they’re active enough.
Nissin Cup Noodles have 14g of fat and 1170mg sodium.
Top Ramen only has 7g of fat and 760mg sodium. Much better.
Ha, ha, ha! Here’s the sneaky part: there are two servings in each of those packages, so you’re actually getting 1520mg sodium.
At least with the Top Ramen you can omit the flavor packet if you want to cut back on the sodium.
Yeah, but then you’re basically just eating unflavored noodles. You need the fake flavory goodness to make a truly yummy snack.
Back in elementary school, we used to eat those Ramen noodles uncooked. Crunch up the block of noodles a little bit to make chunks, sprinkle the flavoring on them, shake up the bag, and it was better than potato chips! Veggie flavor was my favorite.
And why can’t they make it without MSG?! There’s enough sodium in that to flavor it, one would think, without adding the MSG (mono sodium glutamate) to it. Since I can’t eat MSG without getting a migraine, I can’t eat these quick and easy treats either.
Well, if you’re serious about your Ramen, you could try the Oriental Ramen Seasoning Copycat.
I bet if you rummaged around your spice cupboard, you could probably come up with some interesting flavors.
Sometimes I omit the flavor packet and add some chopped cilantro, lemon or lime juice, hot pepper, a couple drops of sesame oil and a little soy sauce to taste. It’s my poor man’s Thai hot sour noodle soup.

Is this a rub or do you mix it with water? If so, how much water?
The copycat mix or my little variation?
Either way I cook the noodles normally. Two cups of boiling water and toss the noodles in. Bring the water back to a boil and when the noodles start to soften stir the flavorings in.
I’d add the fresh cilantro & lime juice after the noodles are about done and I’ve removed the pot from the heat. Those two ingredients don’t benefit from being boiled, IMHO.
I used to throw away the flavoring packet and just add black pepper and garlic powder.
