Alright, so I have an iPhone 3G now, but I’m paranoid to tote the damn thing anywhere without a case. My ideal case would be a non-rigid case (that’s not too thick) with a flip-up flap, to protect the screen.

Don’t worry about it and throw it in your pocket. The glass is surprisingly scratch resistant, so you don’t need to worry about that. The plastic back may scratch, but you’ll have a better iPhone experience if you drop the paranoia and use the phone.
Most of the Apple Store employees were recommending hard cases, as opposed to soft cases. But that’s probably personal preference – the iPhone is pretty sturdy, and should stand up to a fall, even without a case. For the screen, you’re probably better off buying a screen protector, rather than having the case cover the screen. From talking to people, I think the matte protectors are better than the glossy ones.
I use BodyGuardz and it rocks. It’s a scratch resistant full body clear cover. Not sure if they offer one for iPhone 3G yet:

I got Invisible Shield for my Nano. Works great, barely visible at all, tough, and makes the surface just slightly more tacky so provides a better grip than the machined surface. I bought a wallet-type case at the store, but haven’t used it since putting the film on because it’s not as convenient and the film seems to provide plenty of protection.
