Go to your nearest Asian supermarket. In addition to raw pig trotters (which, at least in MA, you can’t get anywhere else) they have raw hocks and all sorts of crazy parts.
I don’t recommend buying this particular meat, seeing as how it appears to have been handled quite a bit. (spotted at Uwajimaya in Seattle, July 2013)
