Caffeine is metabolized by the liver enzyme cytochrome p450 1a2. Here’s a list of other compounds which are metabolized by that same enzyme. Caffeine will compete with these chemicals for the available enzymatic capacity. Grapefruit juice appears to inhibit the cp450 1a2 enzyme, as it significantly slows, by up to a third , the elimination of caffeine.
