You never heard of red-eyed gravy? You combine the ham grease with strong (leftover breakfast) coffee, and add it to the roux. It’s great!
My parents always cooked ham on Easter, but I’m a turkey lover so I always make a turkey dinner. Our’s is tonite and man that birdie smells scrumptious.
To go with our ham and deviled eggs we had:
Sweet poatoes, candied
Cheesy potatoes
broccoli salad, with cashews, bacon, and sunflower seeds
Orange delight
chicken and stuffing casserole
sausage and sauerkraut casserole
Cheesecake
Carrot cake
Ham, Potato/cheese pierogies, asparagus or artichokes with hollandaise, corn, rolls. This year my daughter asked for different potaotes, so I made au gratin potatoes instead of pierogies.
For non-pierogie lovers…if you want to try this delicacy, do not, I repeat, do not start by trying those frozen, gluey Mrs. T’s. Find ones that look handmade, fat and luscious. They can be frozen, but fresh is better. I finally found a store-bought brand that is better than my home-made (Sophie’s Choice…only available in Cleveland-area, I think) but there are bound to be many other small, wonderful brands out there…or find the local Polish/Ukraine/Slovak church that makes them on Fridays.
So Sue, how did your dinner turn out?
I was wrong about what my SO’s family would have for Easter dinner. We had everything except the pork roast and the creamed peas and potatoes I mentioned earlier. We had fried chicken, corn and green beans instead. Ham gravy is always too salty so the fried chicken was made so we could have chicken gravy for our mashed potatoes. I wish I would’ve worn my sweat pants yesterday instead of my khakis… more room to expand!
Ham, sweet potatoes, biscuits, ambrosia, coconut cake, and chocolate bunnies. No ham this year, though. My SO is a vegetarian. Normally, I don’t eat much meat, but on Thanksgiving I want my turkey and at Easter I want my ham. Tempeh just ain’t gonna cut it. He doesn’t eat ambrosia either, partly because of the gelatin, but mostly because he thinks congealed salads are gross. We did have chocolate bunnies, though.
I wonder why ham seems so universal as an Easter food.
