Well, they’re inside the car with the windows closed, scrogging. That requires a considerable expenditure of energy, with consequent buildup of body heat – which is alleviated by perspiration. In situations where relative humidity does not approach 100%, perspiration evaporates, becoming water vapor in the air in the immediate surroundings of the copulating couple. When water-vapor-laden warm air comes in contact with cold glass, it condenses onto it, fogging windows.
I believe that condensation adheres only (mostly?) to surfaces colder than the condensation itself. That’s why defrosters work. What in the world this has to do with Jack and Rose bridging the class divide, beats the crap out of me.
ETA: I didn’t know that “bridging the class divide” was a euphenism for fucking.

Plus, Jack and Rose may have tracked in some water or snow on their shoes, which permeates into the floor mats, and eventually evaporates.

I honestly had no idea who these Jack and Rose people were; I had to look it up. That, in a nutshell, is how much I hate and eschew movies; I didn’t even have a clue who the two main characters were in the biggest blockbuster of the last how ever many years it’s been. :o

They were in the North Atlantic (icebergs!) in April. While the passenger compartments were probably well heated, the hold may not have been. It may have been possible to fog up the windows by just sitting in the car and breathing - with or without any ‘bridging’.
Never saw it, so I’m still lost.
To be fair: It’s hard to get good personal experience in modern cars. There’s not much of a back seat anymore, and front bucket seats just don’t work too well.
