If you’re looking more for singer/songwriter rather than actual folk, you might like Nick Drake, Prelude, Richard and Linda Thompson, and, from our side of the pond, Joni Mitchell, Judy Collins, Lui Collins (local singer originally from Connecticut), Ann Hills, Cindy Mangsen, or Cindy Kallet. For Cindy Kallet, I’d particularly recommend “Working on Wings to Fly”.

Do you mean generally folky or specifically that minor oom-pah Those Were the Days/Fiddler on the Roof sound? If it’s the later, look for klezmer music.
Those were the days is a russian folk song, with added english lyrics. I’d say go in that direction rather than singer songwriters, for that sound.
Branch out into more folk, go to The Incredible String Band. For starters their song I Know You.
