Please help, my MIL is finally agreeing to stick with her doctor’s low-salt diet. Problem is, she absolutely will not cook, and is only eating one variety of low-salt frozen meal, fruits, and vegetables. I have told her I will cook whatever she buys ingredients for, but all she comes to me with are salt-free versions of salty foods (spaghetti sauce, pickles, salsa) that honestly don’t taste good without salt. I’m trying to broaden her palate for salt-free foods, anybody got any good recipes?
I don’t have recipes, but just to bump this I’ll offer a suggestion.
Replace the salt in a recipe with herbs and spices. For example, spaghetti sauce would be good made with fresh tomatoes, onion, garlic, and either basil or oregano, maybe with a few red pepper flakes or a fresh jalapeno. (Pasta does need some salt in the cooking water, but don’t worry; most of that will go down the drain.)
There are also some salt-free seasoning blends you can cook with or use at the table. Mrs. Dash is pretty common (with lots of flavours), but look around the spice aisle and you should find more.
You could roast a chicken just doused with herbs - you can salt your portion and let her eat her cuts unsalted.
I would also look into Moroccan food. I cook a lot of tagines and there are so many herbs and spices that I rarely use salt in them at all; roast lamb and fish, etc.
