Maccaroni Recipe - A must share

I cooked one of my favourite dishes today, Alp Maccaroni (Älplermaccronä in Swiss German).

I really love this stuff so I thought I’d share it.

If you are currently on a diet, please don’t read on. I mean it. Really!

Ok everyone knows Maccaroni with cheese, this recipe is similar, but I think it is much tastier.

Ok, here we go:

Recipe for about 2 persons (ok, maybe 4, but me and my roommate have different sizes of portions than the rest of the population :D)

You’ll need:

400g of maccaroni
400g of potatoes
2-3 large onions
3-4 cloves of garlic
400g of cheese (more on this later)
2dl of cream
Butter
salt,pepper

  1. Cook the maccaroni in salt water (do not overcook)
  2. Peel the potatoes and cut them into cubes (approx 1 cm)
    and cook them in salt water
  3. Peel the onions and hack them. Peel garlic too and cut it up very
    small (as an alternative you can crush the cloves directly into the pan
    in the next step
  4. Put about 50 g of butter in a pan, melt it and cook the onions until
    they become whitish see through (does anyone know the english
    expression for this?). At midpoint, put in the garlic and fry it together
    with the onions. Take pot from stove and put it aside.
  5. Potatoes and maccaroni should be ready by now, so drain them. Put
    the maccaroni back into the pot and put some (30g) of butter in and
    stir it so the maccaroni wont stick together. Take the drained
    potatoes and mix them with the maccaroni in the pot
  6. Most important thing: the cheese. I don’t know what foreign cheese
    would be best as I am using swiss cheese. But the cheese should be
    full fat and have a bit of a taste. Only use normal cheese, things like
    gorgonzola wouldnt work. Shred the cheese.
  7. Now comes the assembly stage: you should now have cooked
    maccaroni, cooked potato cubes, cooked chopped onions and garlic
    mix and the cheese.
    Take an oven form. Now I have a rather shallow form (like 5cm deep)
    so I usually only make 2 layers, if you have a deep form, I’d
    recommend 3.
    Fill the form up to half with potato/pasta mix. Sprinkle about a third
    of the onion/garlic mix on it. Also spread about half of the shredded
    cheese on it. Fill the form up with potatoes/pasta. Spread the rest of
    onions/garlic on it and finally the rest of the cheese. Now mix about
    2dl of cream with pepper and salt. Pour it over your form.
  8. Preheat the oven to 200°C . Put the form into the oven. It takes
    about 20 minutes.
  9. Take out and serve. Enjoy!

Warning: This food may make you drowsy and/or give you quite a belly.
Do not plan any physical activity right after eating and I don’t think going on a date afterwards would be a good idea.

By th way, it is also good as a side dish with maybe a steak or as in my case with a quorn schnitzel.
As a drink, beer or water fit quite well.
