The problem with them? Meatballs are round, which = take a bite -> meatball rolls back into the sandwich (or worse, busts out the side and attempts to escape via your lap and/or the floor) -> mouthful of bread, no meatball.
What to do? Is this a flawed sandwich design, or am I doing something wrong?
Cut the meatballs in half. You still have the meatball taste, but they’re a lot less likely to roll. I speak as someone who’s enjoyed meatball subs all my life.
I ask because this was the cafeteria’s “special” sandwich today, so cutting the meatballs in half would involve deconstructing and re-assembling the whole thing, and that’s a little too much trouble to go to at my desk.
However, cutting them up is indeed a good idea when making one yourself. In this case I just went with the pinch. There was still some blowout, but I managed.
Yes, slice in half. Cut the roll half way through cross-wise before loading it so you can cut halves easily after it’s assembled. Put some mozzerella or provolone on top and melt it in the oven, it will help hold everything together. And finally, make some Italian sausage too when you make the meatballs. A sausage and meatball sub is a gift from heaven.
I make fairly large, Italian style meatballs, and slice them for sandwiches (in half doesn’t really work for these). It’s like mini-burgers, but better.
