Anecdote:
Boyfriend goes to Taqueria Whatever with Mexican friend, can’t read menu (b/c it’s entirely in Spanish), has no idea what to get. Friend recommends ‘sesos’. Boyfriend orders it, comments on odd texture but eats it with no major difficulty. Asks what it was on the way home, friend tells him, boyfriend promptly vomits all over friend and chain steering wheel, which is now on our wall like some sort of trophy. (…the steering wheel, not the friend.)
Mmmm…sesos.
Actually, what got me started was an X-Files repeat. And, yes, I love all those movies you’ve mentioned. 
One of my South Texas friends mother had a bunch of us over for a nice 3 day weekend. On Saturday a.m., she cooked up this fantastic breakfast! It was eggs, potatos, brains, chorizo, tortillas, y menudo.
YUM!
I had ova, intestines, muscle, fat, and quite possibly some sinew, blood, and nerves.
