When we were in Puerto Rico, we ate breakfast a few times at a place that claimed it had ‘the best mofongo’. Of course, they all say that, right? When I finally had mofongo for dinner, it was at a different place. Not bad, but it seemed a bit dry. I might have to make some myself.
So who has the best mofongo recipe? My first choice would be with pork, and my second choice would be with shrimp. But I’m quite open to other things. Post your best recipe!
There are two Dominican restaurants a few blocks from me (both called the Castle of the Jaguar, which is the name of EVERY Dominican restaurant, it seems) that do excellent mofungo with pork, chicken, cheese, or a combination. I just go there when I get a craving, and ask for extra gravy on the side. And a Cuban sandwich to take home.
