Mouth burns and delayed reactions

Since I tend to eat really fast, I don’t pay attention that much to what I’m shoveling down my throat.

While I haven’t died by choking yet, I do have a nasty tendency to stick things in my mouth that are way too hot and I get some superficial burns.

But they never seem to show up immediately after I’m eating. It’s always the day after when I wake up, when I notice that I’ve lost some tissue from the roof of my mouth or from my lips.

Any idea why this is so? Is it because that when I’m eating, I’m usually drinking something (usually something cold) and that numbs the pain for a while.

I’ve also noticed that most of these burns seem to heal faster than if I did the same thing to my hand.
