As long as they’re MP3s that you’ve actually purchased, as opposed to those they let you stream on Prime or something like that, you can freely download them, and they have no DRM so, once downloaded, they can be copied, burned to CD, etc.
At least, that’s the way it’s always been, and AFAIK it hasn’t changed. Is there something that you saw or heard that made you wonder?
It’s certainly a question I had when Apple retired iTunes in favor of Apple Music…
If you’re buying the tracks (instead of subscribing to an unlimited service), there should be no DRM on either service (Amazon or Apple).
The only problems I’ve run into with mp3s downloaded from Amazon is that for some reason the album art doesn’t display on my car audio. Other than that, no restrictions - they behave just like mp3s I’ve ripped from CD or created in Audacity (from vinyl).
