Native Cuisine

We have a native American owned and operated restaurant in Denver called Tocabe. They opened in 2008 and began with dishes traditional the the Osage indians, the tribe to which the owners belong. They have since expanded into dishes from other tribes and have developed new dishes based on traditional recipes. I particularly enjoy their bison ribs and their vegetable salsas which feature combinations of spices that are unusual to the typical American palate.

They are well worth looking up if you are in the Denver area.

I’ve had frybread near the Grand Canyon before, but I had it with powdered sugar. Delicious!

According to the Smithsonian, Navajo frybread originated in 1864 during the Long Walk (forced relocation from AZ to NM)

I’d argue that Johnnycake– AKA jonnycake, johnny cake, journey cake, shawnee cake, or johnny bread is an example of native cuisine that (with the addition of wheat flour and chemical leaveners) evolved into cornbread
