What should you sub for the wine if you can’t use wine?

So easy, yet tasty. Just did it tonight :
Bread crumbs mixed with parmesan cheese. An egg and some milk. Do you have that?! (sorry no use for garlic here).
Dip the chicken in the beat of the egg and milk, coat well in the crumb/parmesan mixture and fry in olive oil (doesn’t need to have too much oil)…
It is so good ! We just ate that here!

Go out and buy a few of jars of dry roasted peanuts. Knock them around violently for a good bit. If you don’t have enough folks around to eat them all, pour the peanuts into a bowl or ziplock and collect the salty brown “peanut dust” from the bottom of the jars. Return peanuts to jar if desired. Rub boneless/skinless breasteses with peanut dust, broil/grill/bake/pan fray as desired.

Very similar to one we do from time to time…same prep (wham! wham! wham! “Is it thin enough yet?” wham!), sauteed in olive oil until just done. Add the wine the same way, but instead of butter, add a small can of slice black olives, then cook the sauce to reduce by half. Pour the sauce & olives over the chicken and serve with rice pilaf.

Another Chicken and rice recipe
Brown chicken in butter
Add 1 box Uncle Bens wild rice
1 can cream of chicken/mushroom or celery soup
1 cup water* (you may need a little more water than this)
1/2 cup chopped celery and onions

simmer until rice is cooked, about 25 minutes

OR

Cube cooked chicken and place in about 3 cups of chicken broth
add small bits of Italian sweet sausage
onions - minced
carrots - finely chopped
spinach - shredded (frozen or fresh)

simmer for 30 minutes

add a small handful of angel hair pasta
boil for just a few minutes
Enjoy.

*Sorry about the measurements, I don’t use recipes but tend to cook by intuition.

EJsGirl: That’s a good question. IIRC, I think you can substitute a half a cup of chicken broth into which you have put 1 tablespoon of good wine vinegar.
